We know we’ve got some sweet potato pie and chocolate cookies in the pantry, but we’re also looking to add some sweet potatoes to our sweet potato cookies recipe to round things out.
This sweet potato and chocolate cookie recipe will be a lovely dessert on its own or in combination with a cup of chia pudding or almond milk.
The key to this recipe is the coconut whipped cream.
You can use any vegan cream, but coconut cream is one of our favourites.
To make this coconut whipped, first whisk together the coconut milk and coconut cream, then add the sweet potatoes, cinnamon and nutmeg.
Add a splash of sweetened condensed milk to the mixture and whisk to combine.
Serve with a bit of honey.

Sweet potato pies contain a sweet and savoury base with an intense taste of buttery sweet potatoes.
Sweet potatoes and buttery potatoes are so closely related that you can add sweet potatoes and cheese to the base of the pie to make it a buttery-sweet potato pie.
Sweet potato pie dough can be made in a few different ways:1.
Use the dough to make a sweet doughnut: 1 tablespoon coconut oil, 2 teaspoons coconut sugar and 1 teaspoon vanilla extract are all you need.
Heat up a frying pan and use a wooden spoon to stir the oil and sugar into the doughnut mixture.
Make a sweet butter doughnut using a floured surface: Mix the floured dough with the coconut oil and vanilla.
Spread a bit with your fingers and form into a ball, flatten slightly and cut into rounds.3.
Make sweet potato butterballs using the same technique: Fill a medium bowl with 1 cup of water, 1 tablespoon coconut sugar, 1 teaspoon of vanilla and the baking powder.
Heat the water to a boil, then cook the mixture in a pan of boiling water for 20 minutes until the mixture thickens slightly.
Remove the pan from the heat and cool to room temperature.4.
Roll out a large rectangle and dip into the melted coconut oil.
Dip the dough into the mixture, making sure not to break the dough.
Dip each doughnut into the coconut cream and butter mixture, using your fingers to ensure each is evenly coated.
Repeat with the next doughnut.
