How to make a gluten-free burger with a homemade drop biscuit and chuck biscuit

Well, if you’re craving something lighter than a traditional bun and without a big fat slab of beef, the possibilities are endless. 

The recipe below uses a drop biscut instead of the traditional bun.

It’s gluten- and dairy-free, dairy- and vegan-friendly, and vegan and paleo-friendly. 

But before you go and buy a box of drop biscuits, here are a few tips on how to make your own.

What to look for in a drop biscuits recipeWhat to do before baking: Use a dough hook to make sure your biscuits don’t stick to the sides.

 If they do, make sure they’re not too thick.

If they’re too thin, they’ll be too soft. 

How to make drop biscuits:Mix the batter with flour, salt and baking powder.

Add in the chopped onions, carrot, celery, green beans and mustard seeds.

You can adjust the amount of baking powder to taste.

You can also use a handheld mixer.

Mix the dough with a fork.

If you’ve never used a doughhook, use a rolling pin.

Roll the dough out to about 1/4-inch thickness.

Make sure the dough is completely dry, but not sticky. 

If you don’t have a doughnut cutter, use your fingers to roll the dough.

If it doesn’t come out with all of your fingers, try adding more flour.

Mix in the melted butter.

If you’re using the doughnut maker, roll the batter out to a circle about 4-inches wide by 2-inches long.

You should end up with a square.

If not, add a bit more flour to make it a little bigger. 

Bake in the preheated oven at 325 degrees F (190 degrees C).

If you’re making this for the first time, bake in a preheating oven at 400 degrees F. If the recipe calls for baking the biscuits for 30 minutes, bake for 45 minutes.

Cook the biscuits on a cooling rack to keep them from burning.

Boil the drop biscuits in the bowl of a standing mixer for about 10 minutes. 

Take them out of the bowl and pour them into the bowl with the batter. 

Repeat until you have enough biscuits for about 20 burgers. 

Pour them into a baking dish, and sprinkle with salt. 

Cover with plastic wrap.

The bun may need to be trimmed before baking.

Bake for about 15-20 minutes, until golden brown.

Remove from the oven.

Pour into bowls.

Cool the bun on the counter for at least 15 minutes before slicing.

Place on a baking sheet and sprinkle some extra flour on top. Enjoy!
